I usually bring a bagel with cream cheese along with a Snickers bar for a hike of that distance. If that's not your thing, try some hard salami along with some cheese. That's always a great secondary option.

For a day hike I take chicken salad (I use faux chicken breasts from Quorn since I'm vegetarian) mixed with almond slivers, celery and dried cranberry. Then I freeze some berries to snack on, which helps keep the chicken salad cold in my pack through lunch time.

Thanks for the ideas! I did a tuna salad with sunflower seeds, flaxseed, and a pinch of couscous in a pita pocket... I forgot the peppers I was really looking forward to.... Hubby had pb & j and a random turkey sandwich.
