I just bought a dehydrator at a yard sale. How long is homemade beef jerkey and dried fruits good for? If I were to vaccum seal it right after it cools, how long would it last unrefergiated? Anyone have any experience with this?

1-2 months on average for homemade jerky.
If you vacumn seal it, be sure to put a desicant pack in there with it. Moisture inside the bag can still cause issues.
My wife dehydrated fruit that has lasted for up to 4 months after vacuum sealing it into personnel size bags for on the trail. I know this because I found an unopened bag while cleaning out my pack. She always puts the contents and the date on each bag. We never tried jerky, always bought it pre-sealed, but now have the desire to try some.
Well, I don't know what the upper limit is, but I just ate my last pack from the first batch; it was vaccumed sealed after it cooled and left unrefergiated; it was 3 weeks old and tasted just fine.

The leaner the meat, the longer the jerky stays good. Venison is very lean.
Alot of jerky recipes call for brown sugar and that's good if you want some dried sweetmeat for snacking around the house or short hike, but if you want it to last for awhile, use no sugarcane products for flavoring. I suppose berries and chokecherries would be fine as they once were used in pemmican making.
